Traditional Scottish Oatcakes

About the Recipe

Ingredients

·         225g oats

·         60g whole meal flour

·         120ml water

·         5g salt

·         2g bicarbonate of soda

·         30g butter

·         30g lard

·         3g mix black pepper, salt, thyme & rosemary

Preparation

  1. Heat the oven to 190 oC.

  2. Mix together the oats, flour, salt and bicarbonate of soda in a bowl.

  3. In a pan, warm the butter, lard and water.

  4. When all are melted, add the dry ingredients and stir for one minute on a low heat.

  5. Remove from the pan and work the ingredients into a dough consistency

  6. Sprinkle some extra flour on a work surface and initially roll out 1/2 the dough to about 2 mm thickness.

  7. Use a cookie cutter to cut out about 16 rounds (the final number of oatcakes depends on the size of cutter you use).

  8. Place the oatcakes on a baking tray and bake for 20 mins or until golden.
