About the Recipe
· 225g oats
· 60g whole meal flour
· 120ml water
· 5g salt
· 2g bicarbonate of soda
· 30g butter
· 30g lard
· 3g mix black pepper, salt, thyme & rosemary
Heat the oven to 190 oC.
Mix together the oats, flour, salt and bicarbonate of soda in a bowl.
In a pan, warm the butter, lard and water.
When all are melted, add the dry ingredients and stir for one minute on a low heat.
Remove from the pan and work the ingredients into a dough consistency
Sprinkle some extra flour on a work surface and initially roll out 1/2 the dough to about 2 mm thickness.
Use a cookie cutter to cut out about 16 rounds (the final number of oatcakes depends on the size of cutter you use).
Place the oatcakes on a baking tray and bake for 20 mins or until golden.
