Butter & Almond Shortbread

About the Recipe


  • 165g plain flour

  • 10g cornflour

  • 50g ground almonds

  • 180g butter-softened and cubed

  • 100g castor sugar

  • 75g semolina

  • zest of 1/4 lemon and 1/4 orange


  1. Pre-heat the oven to 140oC

  2. Add all the ingredients together in a bowl

  3. Work the butter into all the other ingrdients with your fingres

  4. When evenly dispersed knead for one minute

  5. Chill for 30 minutes

  6. Bake for 35 minutes or until very light brown
