Oat and Cottage Cheese Pancake

Ingredients

  • 250g cottage cheese

  • 150g oats

  • 10g protein powder (optional)

  • 4 eggs seperated

  • 25g blueberries

  • 25g banana

  • 100g greek youghurt

  • 1g salt

  • 1g cinnamon

Preparation

  1. blend oats, cottage cheese, egg yolks, greek yoghurt, protein powder and salt, blend in a blender for 5 seconds

  2. whisk egg whites in a spereate bowl-to full peak

  3. add 1/3 egg white mix to the blended ingredients and mix together

  4. then add this mixture to the remaining egg whites and gently fold in

  5. spoon into a large frying pan, cook on either side for 3 minutes

  6. serve with the remaing greek yoghurt and as much fresh fruit as you wish
