Oat, Mango & Apple Snack Bar

Ingredients

For the biscuit mix

  • 250g oats

  • 250g skyr

  • 50g coconut butter

  • 25g flour

  • 50g honey

  • 50g sugar

  • 10g grated ginger

For the filling

  • 100g mixed seeds

  • 150g grated apple

  • 150g chopped fresh mango


Preparation

  1. Pre-heat oven to 160oC

  2. Place all the ingredients for the biscuit mix into a bowl and microwave until the butter is melted

  3. stir

  4. place 2/3 of the mixture into the base of a 30cm bread tin

  5. place a layer of mixed seeds on top of the biscuit mix

  6. evenly spread the mango and grated apple on the biscuit mix

  7. cover the filling with the remaining biscuit mix

  8. bake for 40 minutes

  9. remove/ cool/ slice

  10. serve
