Kidney Bean Brownie

Ingredients

  • 275g kidney beans (soaked and boiled or tinned)

  • 100g oats

  • 100g greek yoghurt

  • 100g 80% dark chocolate (rough chopped)

  • 50g sultanas (soaked in an espresso coffee)

  • 50g hazelnuts (rough chopped)

  • 50g peanut butter

  • 50g honey

  • 20g coconut butter

  • 20g cocoa powder

  • one egg

  • 3g baking powder

Preparation

  1. pre-heat oven to 170oC

  2. with the exception of the chopped nuts, chopped chocolate and baking powder, blend all the ingredients NOTE: the mixture should contain "chunks" and not be a smooth paste

  3. place in a bowl

  4. add the remaining ingredients

  5. bake in a 25 X 15 cm oblong tin for 20 minutes

  6. allow to cool before cutting
