Ingredients
175g butter
175g dark brown sugar
3 eggs
zest of one orange
175g white flour
100g of mixed seeds
7g baking powder
1/2 teaspoon-nutmeg, ground coriander, ground clove, salt
1 teaspoon cinnamon
180g grated carrot
120g raisins (soak for 24 hrs in (100 ml rum)
Preparation
with the exception of the soaked raisins and grated carrots, add all the ingredients into a mixing bowl and beat until smooth
drain the raisons (save the rum), mix with the grated carrots
stir into the cake mix
place in a 20 x 15 cm baking tin
bake at 155oC for 50 minutes or until the center of the cake is 95oC
once out of the oven pour over the rum soaking liquer
allow to cool
