Ingredients
100g dark chocolate
50g honey
50g peanut butter
100g dried apricots
50g pumpkin seeds
100g oats
75g desiccated coconut
50g greek yoghurt (or coconut milk)
10g fresh ginger (grated)
espresso shot
Preparation
place all ingredients with the exception of the oats, desiccated coconut, pumpkin seeds & greek yoghurt in a plastic bowl and microwave for 2 minutes (or over a pan of boiling water)
ensure the chocolate has melted, then add all the remaining ingredients, mix well place in a 8 x 15cm tray and refrigerate for 2 hrs.
once solid, cut into 2cm x2cm blocks
