Banana-Oat-Cinnamon Pancake

Ingredients

PANCAKE

  • 2 bananas

  • 2 eggs

  • 100g oats

  • 20g chopped walnuts

  • 3g cinnamon


SAUCE

  • one shot espresso

  • 25g honey

  • 25g peanut butter

  • 100g yoghurt


Preparation

PANCAKE

  1. place all the ingredients in a food processor, blend for one minute

  2. heat a large frying pan to a medium heat, brush with a little oil

  3. add the mixture, cover with a lid and leave for 3 or 4 minutes

  4. until the mixture becomes solid

  5. turn over and leave for a further 3 minutes

  6. NOTE: be careful not to burn


SAUCE

  1. make an espresso

  2. add all the sauce ingredients and whisk together
