Traditional Scottish Oat Cakes

  • 225g oats

  • 60g whole meal flour

  • 120ml water

  • 5g salt

  • 5g bicarbonate of soda

  • 30g butter

  • 30g lard

  • 3g mix black pepper, salt, thyme & rosemary


  • Heat the oven to 190 oC.

  • Mix together the oats, flour, salt and bicarbonate of soda in a bowl.

  • In a pan, warm the butter, honey & peanut butter.

  • When all are melted, add the dry ingredients and stir for one minute on a low heat.

  • Remove from the pan and work the ingredients into a dough consistency

  • Sprinkle some extra flour on a work surface and initially roll out 1/2 the dough to about ½cm thickness.

  • Use a cookie cutter to cut out about 16 rounds (the final number of oatcakes depends on the size of cutter you use).

  • Place the oatcakes on a baking tray and bake for 20 mins or until golden.
