LIME AND CHILI AUBERGINE
400g fresh cucumber, grated
25g fresh garlic, grated
50g red onion, finely chopped
10g fresh mint, finely chopped
1 lime, zested
180ml greek yoghurt
15g fresh coriander, roughly chopped
