For the cake batter

1 very ripe large avocado, mashed

1 apple, grated

75g peanuts, rough ground

85g unsalted butter, diced, then allow to go soft

100g cane sugar

75g honey

1 lime, finely zested and juice

2 large eggs

1 tsp vanilla extract

250g plain flour

Pinch salt

2 tsp baking powder or soda powder

1 tsp baking soda

100ml coconut milk

For the base

75g rough ground peanuts


  • Mix all ingredients together and beat with a whisk for 3 minutes

  • Grease and flour a 1kg oblong tin, place 75g of ground peanuts in the base

  • Place the cake batter over the peanuts and then bake at 180oC for 50 minutes

  • Once cool, smoother with peanut and caramel sauce (recipe on the main food page)
