Sweet Potato Gnocchi

Ingredients
350g sweet potato (baked)
350g baking potatoes (baked)
200g flour
1 egg yolk
1g ground cloves
1g cinnamon
4g salt
Preparation
Bake both sweet potato and potato until soft (baking prevents vital nutrients being "leached" away)
Puree both potatoes-NOTE: do not over work they will become elasticy
Add sufficient flour for the mix to become dough like
Rest for 30 minutes
Boil in seasoned water for 3 minutes-NOTE the cooking water shold taste of "Sea water"
Serve immediately
Should you wish to pre-cook-once cooked place in cold water, allow to cool, drain and add 20g of oil to prevent sticking
