Italian Baked Salmon

Ingredients
200g salmon steak
100g courgetti (1cm dice)
100g Aubergine (1cm dice)
100g vine tomatoes (1cm dice)
One garlic clove (finely sliced)
2 basil bunch
Juice ½ lemon
25ml olive oil
25ml water
50g couscous
Salt & pepper
Preparation
Prepare a piece of aluminum foil 15 x 15cm
Place the cous cous on the base and then the diced Aubergine and courgetti on top
Rub the salmon in the salt and pepper and place on the vegetables
Finely, place the tomatoes, garlic, lemon, olive oil and basil
Wrap the parcel up
Bake at 180oC for 25 minutes
Leave to cool for 15 minutes
