Cloud Bread with Flax Seeds

Ingredients

  • 6 egg whites

  • 6 egg yolks

  • 100g low fat cottage cheese

  • 15g cornflour

  • 2g salt

  • 20g flax seeds

  • 20g parmesan cheese

Preparation

  1. pre-heat the oven to 150 oC

  2. mix together the egg yols, cream cheese to form a smooth paste

  3. beat the egg whites until they are "fluffy"

  4. mix 1/3 of the egg whites into the cheese/fegg mixture

  5. sprinkle flax seeds and parmesan on the base

  6. using a large spoon, place "bread roll" size potions on a baking tray

  7. dust with parmesan cheese and remaining seeds

  8. bake for 20 minutes in the oven

  9. once baked turn off the oven and leave for a further 30 minutes
