Chocolate chip Cookies

Ingredients

  • 200g softened butter

  • 320g soft brown sugar

  • 1 packet vanilla sugar

  • 2 eggs plus one extra egg yolk (beat together in a cup)

  • 300g self raising flour

  • 80g cocoa powder

  • 1g salt

  • 1 teaspoon baking powder

  • 50g vegetable oil

  • 300g chopped chocolate bar

Preparation

  1. beat the sugar, butter and eggs together for 3 minutes

  2. gradually add the beaten egg mix

  3. add all the remaining ingredients and gently mix together

  4. spoon approx. 75 g drops onto a baking sheet

  5. bake at 180 oC for 12 minutes

  6. allow to cool for 3 minutes then place on a cooling rack
