50ml sesame seed oil

120g red onion, rough chop

3 garlic clove, rough chop

30g fresh ginger, grated

15g red chilli, finely sliced

10g ground tumeric

10g ground Cumin

2 bay leaf

200g sweet potato, 2cm cube

250g red split lentils

600ml vegetable stock

100g fresh spinach

100g fresh avocado, mashed, added last minute

100g spring onions, sliced, garnish

100g coconut Yoghurt, garnish


  • Apart from the avocado, spring onions and coconut yoghurt add all ingredients to a pan and simmer for 45 minutes

  • NOTE: this dish will require special attention when seasoning
