TRADITIONAL GOULASH SOUP

Ingredients for 10 people

2kg beef topside, diced 1-1.5cm 

200g smoked bacon/pork diced .5cm

100g lard (or oil)

250g onions, finely chopped

10 cloves garlic, grated

500g fresh tomato, diced

250g capsicum peppers, diced

1kg carrots, sliced

1.5kg potatoes, diced

250g celery, diced

500g kohlrabi (German turnip), diced

100g parsley, leaf, stalk & root (finely sliced)

80g paprika powder

salt, pepper

25g cumin seeds

25g fennel seeds

 

 

Method- Preparation time: One hour  - Cooking time: 4 hours

  • Melt the lard in a pot, add the onions and sauté for 3 or 4 minutes, until transparent

  • Add the tomatoes and peppers, and fry for a further 5 minutes until soft

  • Add the beef and pork and fry until the meat is completely sealed

  •  Add the paprika, and garlic with 100ml water and mix well with the meat

  • Cover the meat with just enough water that the meat is submerged, place on the lid and let it cook for two hours

  • Add five liters of water

  • Add the fennel, cumin, salt & pepper

  • Simmer for a further 2 hours or until the meat is tender

  • Add carrots, kohlrabi, celery, potatoes parsley 

  • Add extra salt and pepper as required

  • Cook for a further one hour until the vegetables are soft
