TANDOORI CHICKEN

Ingredients

  • 4 tsp paprika

  • 2 red onions, finely chopped

  • 8 skinless chicken thighs

  • vegetable oil, for brushing

For the marinate

  • 300ml Greek yogurt

  • juice 2 lemons

  • large piece ginger, grated

  • 4 garlic cloves, crushed

  • ¾ tsp garam masala

  • ¾ tsp ground cumin

  • ½ tsp chilli powder

  • ¼ tsp turmeric

Method

  • Mix all the marinate ingredients together 

  • Place the chicken thighs in the marinate and leave for 4 hours

  • Heat oil in the pan and "Sear" fry the chicken

  • Place the chicken in a hot oven (200 oC) for 20 minutes 

  • Or place on skewers and BBQ

  • Warm the marinate in a pan and serve separately
