TANDOORI AUBERGINE
Ingredients

4 tsp paprika
-
2 red onions, finely chopped
-
3 large aubergines
-
vegetable oil, for brushing
For the marinate
-
300ml Greek yogurt
-
juice 2 lemons
-
large piece ginger, grated
-
4 garlic cloves, crushed
-
¾ tsp garam masala
-
¾ tsp ground cumin
-
½ tsp chilli powder
-
¼ tsp turmeric
Method
-
Mix all the marinate ingredients together
-
Place the sliced Aubergine in the marinate and leave for 4 hours
-
Heat oil in the pan and "Sear" fry the Aubergine
-
Place the chicken in a hot oven (200 oC) for 20 minutes
-
Or place on skewers and BBQ
-
Warm the marinate in a pan and serve separately
