Sweet Potato Gnocchi

  • 350g sweet potato (baked)

  • 350g baking potatoes (baked)

  • 200g flour

  • 1 egg yolk

  • 1g ground cloves

  • 1g cinnamon

  • 4g salt


  1. Bake both sweet potato and potato until soft (baking prevents vital nutrients being "leached" away)

  2. Puree both potatoes-NOTE: do not over work they will become elasticy

  3. Add sufficient flour for the mix to become dough like

  4. Rest for 30 minutes

  5. Boil in seasoned water for 3 minutes-NOTE the cooking water shold taste of "Sea water"

  6. Serve immediately

  7. Should you wish to pre-cook-once cooked place in cold water, allow to cool, drain and add 20g of oil to prevent sticking
