Guinness Sticky Toffee Pudding

Ingredients

CAKE

  • 250g dried mixed fruits

  • 230ml Guiness

  • 60ml milk

  • 10g mixed spice

  • 5g baking powder

  • 250g self-raising flour

  • 2 eggs

  • 90g butter

  • 160g brown sugar

  • 2 teaspoons honey

  • zest and juice of one orange

SAUCE

  • 175g brown sugar

  • 50ml water

  • 50g butter

  • 225g condensed milk

  • 50g butter

  • 25ml coffee liquer

  • 25ml whiskey




Preparation

  1. Pre-heat oven to 170 oC

  2. Warm the milk and Guinness in a pan

  3. Add the dried mixed fruit, mixed spice and baking soda

  4. Soak for 30 minutes

  5. Place all other ingredients into a mixing bowl

  6. Beat until smooth

  7. Gently blend both ingredients together

  8. Place in an oblong 25cm loaf tin

  9. Bake for 35 minutes


SAUCE

  1. place the water and sugar into a pan

  2. simmer until it becomes caramel coloured

  3. add all other ingredients

  4. simmer for 3 minutes

  5. allow to cool


  6. pour over the pudding
