Ingredients
CAKE
250g dried mixed fruits
230ml Guiness
60ml milk
10g mixed spice
5g baking powder
250g self-raising flour
2 eggs
90g butter
160g brown sugar
2 teaspoons honey
zest and juice of one orange
SAUCE
175g brown sugar
50ml water
50g butter
225g condensed milk
50g butter
25ml coffee liquer
25ml whiskey
Preparation
Pre-heat oven to 170 oC
Warm the milk and Guinness in a pan
Add the dried mixed fruit, mixed spice and baking soda
Soak for 30 minutes
Place all other ingredients into a mixing bowl
Beat until smooth
Gently blend both ingredients together
Place in an oblong 25cm loaf tin
Bake for 35 minutes
SAUCE
place the water and sugar into a pan
simmer until it becomes caramel coloured
add all other ingredients
simmer for 3 minutes
allow to cool
pour over the pudding
