Cloud Bread with Flax Seeds

  • 4 egg whites

  • 50g low fat cottage cheese

  • 10g cornflour

  • 2g salt

  • 20g flax seeds

  • 20g parmesan cheese


  1. pre-heat the oven to 150 oC

  2. mix together all the ingredients with the exception of the egg whites in a bowl

  3. beat the egg whites until they are "fluffy"

  4. mix 1/3 of the egg whites into the cheese/flax seed mixture

  5. add the cheese mix to the remaining egg whites. very gently fold into together

  6. using a large spoon, place "bread roll" size potions on a baking tray

  7. dust with parmesan cheese

  8. bake for 20 minutes in the oven

  9. once baked turn off the oven and leave for a further 30 minutes
