Apple, Ginger and Date Granola Bar

Ingredients

For the granola bar

  • 300g oats

  • 50g mixed seeds

  • 200g coconut butter

  • 150g apples (grated)

  • 50g sugar

  • 50g honey

  • 20g fresh ginger (finely grated)

For the topping

  • 100g peanut butter

  • 50g coconut butter

  • 25g honey

Preparation

For the granola bar

  1. place all the ingredients for the granola bar in a plastic bowl and microwave for 2 minutes or until the butter has melted

  2. mix the ingredients together

  3. place in a 20cm oblong baking tin and bake for 35 minutes at 160oC

For the topping

  1. beat all the ingredients together until smooth

  2. once the bar has cooled cover the top of the bar with the topping
