OUTDOOR AND ACTIVE

Ingredients
SWEET PASTE
190g plain flour
15g cornflour
85g cold butter, cubed
25g icing sugar, plus extra for dusting
1 lemon, grated zest and juice
1 free-range egg, beaten
FRANGIPANE
100g butter , softened
100g golden caster sugar
2 eggs
140g ground almond
75g plain flour
2g baking powder
MINCEMEAT
175g currants
175g raisins
175g sultanas
175g dried cranberries
100g mixed peel
1 apple, peeled, cored and grated
125g butter, cut into cubes
50g chopped almonds
225g light brown sugar
½ tsp ground cinnamon
1 tsp mixed spice
finely grated rind and juice of 1 orange
150ml brandy
50 ml sherry
Preparation
SWEET PASTE
Add all the ingredeints into a bowl
Firstly, rub the butter with your fingers to disperse evenly with the other ingredients
Then knead the mix hard for 3 minutes
Rest in the fridge for 30 minutes before rolling
FRANGIPANE
Beat the softened butter and sugar together with a whisk
Gradually add the beaten eggs
Gently stir in the ground almonds and flour
MINCEMEAT
Place all the ingredients into a pan
Simmer for 5 minutes
Place in a sterilized jar to cool
Once cool, cove and store in a fridge
