QUEEN MOTHER'S CAKE

In a "previous life"  I was a military chef and had the pleasure to actually cook the cake for the Queen Mother "The Secret" then was we soaked the dried fruit in Lady Grey-as this recipe-Enjoy. Any queries or questions just go to the Blog

Ingredients:

For the dried fruit

110g dried dates

200ml boiling water with lady grey teabag

5g baking powder

For the cake batter

100g caster sugar

70g brown sugar

60g soft butter

170g plain flour

60g chopped walnuts

1 beaten egg

10ml vanilla extract

5g teaspoon salt

For the topping

150g soft light brown sugar

100g butter

25ml cream (38%)

50g chopped walnuts

Method:

  • Pre-heat oven to 160 oC

  • Soak the dates, teabag and baking powder for 30 minutes

  • Mix together all the ingredients for the batter then add to the date mixture, stirring well

  • Tip into a greased and floured 30 cm round tin

  •  Bake for 45 mins

  • Mix together all the ingredients for the topping in a small saucepan and boil for three minutes, allow to cool for 15 minutes 

  • Spread over the cake then top with  walnuts

  • Cool then cut into portions
