FERMENTED CARROT & GINGER
For the vegetables
400g ribbon carrots
For the flavor
25g fresh garlic, grated
100g ribbon fresh ginger
10g caraway seeds
For the fermenting liquor
100 ml water
3g salt

Method
-
Whisk the salt and water together - This then becomes the fermenting liquor
-
Place the carrots, ginger, garlic and caraway seeds in a jar
-
Cover with the fermenting liquor -NOTE: ensure the vegetables are kept submerged and the container is airtight
-
Leave in a warm room and check that the ferment bubbles occasionally
-
Can be eaten any time after 2 weeks-NOTE: the longer the vegetables are left the more flavorsome they become
