For the vegetables

400g ribbon carrots

For the flavor

25g fresh garlic, grated

100g ribbon fresh ginger

10g caraway seeds

For the fermenting liquor

100 ml water

3g salt



  • Whisk the salt and water together - This then becomes the fermenting liquor

  • Place the carrots, ginger, garlic and caraway seeds in a jar

  • Cover with the fermenting liquor -NOTE: ensure the vegetables are kept submerged and the container is airtight

  • Leave in a warm room and check that the ferment bubbles occasionally 

  • Can be eaten any time after 2 weeks-NOTE: the longer the vegetables are left the more flavorsome they become
